The Mountain Water Process decaf without the chemicals.
Descamex, in Veracruz, Mexico, uses glacial water from Pico de Orizaba, the country's highest mountain. The beans are steamed, then soaked in a solution already saturated with every coffee flavour compound except caffeine so caffeine's the only thing with anywhere left to go. It moves out of the bean and into the water, while the flavour stays exactly where it should. What's left: coffee that's 99.9% caffeine-free, with the actual taste still intact.
No solvents, nothing synthetic just water, engineered properly.
Mixed heirloom varietals, washed, grown at 900โ1,100m.
Medium roast only decaffeinated beans behave differently under heat than regular beans, and pushing this one darker would trade away the delicate grape and chocolate character for nothing gained. Same honesty as everything else in this range: we're not going to dress decaf up as something it isn't, or offer options that don't actually serve the coffee.
