Two completely different ways of taking the caffeine out.
Mexico's half goes through the Mountain Water Process chemical-free, glacial water from Pico de Orizaba, no shortcuts. Colombia's half goes through methylene chloride a solvent process, cheaper, and just as legitimate a method, even if it doesn't sound as glamorous on a label. We're not going to pretend this blend is one clean story.
It's two different origins, two different processes, blended because together they make a properly good decaf not because the process matched up neatly.
That's the same honesty as everything else in this range. Most decaf blends don't tell you how each half was processed, because most of them are hoping you won't ask.
We're telling you before you do.
What you actually get: Mexico brings sweet grape and chocolate depth.
Colombia brings green apple brightness and caramel sweetness. Together, a full-flavoured decaf blend that doesn't taste like an afterthought because it isn't one.
