Ethiopia is where coffee started. Not "one of the earliest producers" the actual birthplace. Where arabica first grew wild before anyone farmed it anywhere else on earth.
Every arabica bean in existence traces back here, the same way every robusta bean traces back to Uganda.
Heirloom varieties, not a named cultivar.
Ethiopia's genetic diversity is so vast that most of what grows here still hasn't been formally classified farmers grow trees passed down for generations, not a bred, standardised variety like you'd find almost anywhere else. That's not a gap in the spec sheet.
That's just what genuinely wild-origin coffee looks like.
Grown in Djimmah, western Ethiopia, at 1,650â2,000m.
 historically shipped through the Yemeni port of Mocha, which is where the old trade name "Mocha Djimmah" comes from. Naturally processed, sun-dried, harvested November through January. Natural processing means the cherry stays on the bean through drying, and that's exactly where the winey, fruit-driven intensity comes from it's a processing choice, not an accident.
